It was Thursday evening when we went to Shin Sen Gumi and boy does it get busy. There’s two sides to the restaurant. One’s more fast paced casual whereas the other side is a slow paced restaurant. I’ve never been to the restaurant side but there are additional items on their menu such as Yakitori, Haktata Mizutaki, Chanko, Motsu-Nabe, Shabu-Shabu/Sukiyaki, Udon,

The fast paced side is perfect when you're craving noodles and want to get out fast. Just to let you know, it can get quite loud as it's the restaurant's custom to yell out Japanese words when you come in and when you leave.
This is the go to place if you're craving something warm and flavorful. This little location serves mainly Hakata Ramen which is made of think soup made from pork bones called Tonkotsu.

Check out the last time I visited Shin-Sen-Gumi Hakata Ramen and other ramen restaurants like Monta Ramen: Japanese Noodle House, Santouka Ramen, Kabuki Restaurant, and Sushi On Fire.
Be sure to sign in before you just barge into the mini side of the restaurant. They'll call you in once they have available seats but as you wait you can check out their menu and decide if which ramen you want, the noodle type, the broth type, and extra toppings like cha-shu, corn, wontons, egg,

The Gyoza's seem big but don't be fooled! They were so tiny. These were the tiniest gyozas I've ever seen...

I never tried the Wonton Soup so I decided to give it a try. There were plenty of wonton pieces and doesn't come with any noodles. I also added corn and an egg. The egg is salty but yummy. I think it's marinated in soy sauce overnight hence the color and flavor. The pork cha-shu which is pork belly just melts in your mouth. A normal ramen order comes with cha-shu pork, red colored giner, sesame seeds and scallions. At every table there are sesame seed shakers as well as peppers and oil.
