Hey everyone, how was your weekend? The weather over the weekend was wonderful since it literally felt like summer. Don’t get me wrong, I love the warmth of the sun, but we are still in need of rain. We hiked at our usual spot and went further than our usual turn around point. The hiking area was full of early birds taking advantage of the great weather for a hike with their dogs, significant others, friends, kids, and bikers.

Also over the weekend, “G” and I went to Maggiano’s Italian Restaurant and enjoy so much delicious dishes where I tried the Gnocchi for the first time! I haven’t had pasta in such a long time it reminded me how much I actually missed it. I’ll be posting about our eats adventure so stay tuned, or should I say, stay posted!

Because of the pasta memories, I wanted to share the Garlicky Penne Pasta with you all. We were surprised at how simple it was to make. At first I thought it was going to be quite difficult but it’s not so bad. In the end you’ll feel great that you’ve accomplished making a delicious penne pasta dish.

Garlicky Penne Pasta

Ingredients:
1 package pene (cooked as directed)
2 tbs butter
2 Garlic cloves
2 tbs flour
3/4 cup chicken broth
3/4 cup milk
2 tsp parsley flakes
Salt & pepper to taste
1/3 cup grated parmesan cheese

Directions:
1. Melt butter and add garlic in sauce pan.
2. Cook over medium heat for about a minute.
3. Add flour and cook additional 1 minute and stir continuously.
4. Stir in broth and milk and cook, stirring frequently until sauce boils and thickens.
5. Add parsley, pinch of salt and pepper.
6. Stir until cheese is melted
7. Toss hot pasta with sauce and serve immediately.

You can even add a slice of Texas toast bought from the market and some white wine 🙂
