Hey everyone! Did everyone have a good weekend? Also Happy St. Patty’s Day I hope you remembered to wear green! I don’t want anyone to be pinched, that’s for sure. Well the weekend was great since we had wonderful hot weather, eventful and productive days and unfortunately it went by so quick.
Fun 8 + mi Hike @ Laguna Coast Wilderness Park
“G”, my friends and I all gathered at a local Costco and took a trip to Laguna Coast Wilderness Park. What is Laguna Coast Wilderness Park?
Per Laguna Coast Wilderness’s site, the “Park lies within some of the last remaining coastal canyons in Southern California. Forty miles of trails lead the visitor through oak and sycamore woodlands and up onto ridges with expansive scenic vistas. Rocky bluffs tower above the canyon trails.”
Be on the lookout here as there are many animals that makes this place their habitat such as mule deer, long-tailed weasel, bobcat, red-tailed Hawk, lizards,and many more. There are other species also resides here such as the Sage Shrug community.
It was an amazing 8+ mile hike we went on and it was a challenge. There’s a lot of switch backs, and you have to make sure to bring lots of snacks and water as we ran out. Be sure to wear hiking boots as well since the trails can be rocky throughout and a good boot with ankle support is a must.
Also be sure to bring sunscreen and a hat as it will get hot. By the time we got back to the truck, it was around 91 degrees! It was basically summer already even though it’s still not officially springtime yet…it’s still winter…

Before you hit the trails, you’ll need to sign in at the visitor’s center and while you’re at it, be sure to check out what they have to offer. You will learn something new about the hikes, wildlife, and so much more.

Parking Lot Hours – 8 a.m. to 5 p.m. Trails open 7 a.m. to sunset.
St. Patty’s Celebration
On Friday, we celebrated St. Patty’s Day early and had some corned beef that my friend “E” had cooked in a crock pot which was simply delicious. The beer added that special touch to the stew and the cabbage and carrots were so flavorful. I never imagined having mustard with cabbage, carrots, and the corned beef but “E” told me it can’t get any more Irish than that. It was a delicious combination and “G” and I will be looking up a recipe for corned beef for the Crock Pot.
“G” and our friend “R” had an idea on what to drink and they decided to have the 2 layer beer. “black and tan” made with Guinness and a tan beer. I remember seeing that for the first time at the Hennessy’s Tavern Bar in Seal Beach after my friend’s bday party last year.
