Easy Corned Beef Recipe

Hi everyone! How are you all doing? It was nice that we got a little bit of rain today which is perfect for the garden “G” and I have. We have corn, chili, and tomatoes planted so the rain will really help. But of course we will need the sun as well which we had pretty decent amount of.

This may be a late post for St. Patty’s but it doesn’t mean you can’t have Corned Beef when ever you’d like. Over the weekend, we were craving corned beef so much that we went to Costco to get the Bill Bailey’s Irish Brand Corned Beef Brisket. And we pretty much had all the other remaining ingredients so we were ready to begin the slow cookin’! We invited our friend over and he had fresh delicious cabbages that were ready to eat straight from his garden.

Here’s an easy corned beef recipe you should all try and see how simple and easy it is. Especially if you don’t have the time to cook, this is the perfect meal for the family.

Ingredients:

Bill Bailey’s Irish Brand Corned Beef Brisket (Available at Costco)
1 bottle 16 oz. Irish Beer (Murphy’s Stout)
4 Cups Baby Carrots
5 Cups Potato Medley
2 Cabbage
4 Cups Water
1 onion (Sliced into fours)
4-5 garlic cloves

Directions:
1. Add carrots, potato, garlic into Crock Pot, and then add water.
2. Add corned beef and pour beer over the brisket.
3. Add onions
4. Set cook time on low for 9 hours
5. Once slow cooked for 9 hours, remove brisket and cut into edible slices.
6. Serve with cabbage and a side of mustard.

For cabbage:
In a large pot, add cabbage and pour 1 16 oz. beer and simmer until steamed.
