Easy bean, cheese, and onion “taco”
Ingredients:
Makes 1 serving

1/4 cups of any re-fried beans
2 romaine lettuce leaves (chopped)
1/4 cup Mexican cheese
1/2 onion (desired thickness of the slices)
1 tsp butter or olive oil
Dash of salt and pepper
Few cilantro leaves
1/4 avocado
1 tortilla

Directions:

1. Preheat oven to 300 degrees. Spread beans onto the tortilla, add cheese, then place in oven         until cheese melts.
2. In a saute pan, add butter under medium-high heat and add onions once butter is bubbling.
3. Spread onion evenly and stir occasionally. Decrease stove top burner to prevent the onions           from burning or drying out.Once the onions begin to caramelize
which is in about 10 minutes, add salt and pepper. You may add more butter or olive oil. Keep     stove top burner low and cook for about half to an hour
more more while stirring every few minutes.
3. Add chopped lettuce on top of the layered tortilla, onions, cilantro, and slices of avocado and      enjoy.
