What I like about flour tortilla is that it’s so versatile. If you end up having eggs for breakfast, you can wrap it in a tortilla or you could even make a wrap. Then I thought to myself what else I could do with it. I always seem to have an abundance of peanut butter and banana so then I decided to experiment a little bit and make a Bananas & Peanut Butter Quesadilla. This can make a good filling breakfast or even as a snack because it’s sweet and savory.

Bananas & Peanut Butter Quesadilla:

Ingredients:

  • 1 Flour tortilla
  • 2 tbs Peanut Butter ( Either creamy of crunchy)
  • 1 Banana
  • 1 tsp cinnamon or to your desire

Directions:

  1. Heat a medium skillet over medium heat and spray pan with cooking spray.
  2. Spread peanut butter evenly over tortilla. Arrange banana slices over tortilla, sprinkle cinnamon. After bottom of tortilla is lightly browned, fold over half of tortilla gently press down.
  3. Flip tortilla on both sides until desired color. Cut each quesadilla into halves and enjoy.
